Moving on...

After a lot of thinking I am not going to keep posting recipes on this blog. A few months ago started another blog about our life here in Greenland.  It is maseysthoughts.blogspot.com. This is where I will be posting  recipes from now on.  It will be easier to maintain just one blog. Thank you for following me and I hope these recipes have been a blessing to you and your family.  Just hop on over to my new blog and keep an eye out for recipes there. I will be posting about some Peach Cobbler later today.  :)   Thank you!

Buffalo Chicken

We had buffalo chicken sandwiches tonight. They turned out really good. It was one of those meals where you were full but you could have eaten more!  This recipe does have hot sauce in it, but it is really not that spicy. My kids even enjoyed it, even our youngest! And this comes from a little one who doesn't like anything hotter than ketchup!   So here it is:

4 chicken thighs(or any part of the chicken you like)
About 2-3 Tbsp of butter
2 Tbsp Hot sauce (more if you want it spicier)
Dry Ranch pack
Sour Cream

Boil the chicken until done. After the chicken has cooled, shred it, and set aside. 
Next you melt the butter then add the hot sauce. 
Coat the chicken in the sauce, and heat the chicken until warm.
 Make up the ranch pack and use it as a sandwich spread.

Buttermilk Pancake Syrup

I got this recipe from Carole, when we visited them in Ilulissat. Since syrup here in Greenland runs about $12 for a tiny bottle, this is awesome for us. It's very simple and tastes great! I also doubled the recipe and it made extra for next time we declare a pancake day!

1/2 cup butter
1 cup sugar
1 cup buttermilk
1 TBS vanilla
1 TBS corn syrup
1/4 tsp cinnamon
1/2 tsp baking soda

Bring butter,sugar,buttermilk,vanilla,corn syrup,and cinnamon to a simmer in a large sauce pan, over med-high heat. Once simmering whisk in the baking soda and cook for 10 seconds before removing from heat.
Serve warm, and enjoy.

Lamb and Peppers

Greenlanders pride themselves in their lamb. The lambs here are only raised in South Greenland. They usually make soup out if it, but I decided to try making it a little bit different . I found this recipe in my Better Homes and Garden Cook Book. 
It was really tasty and you get a lot of the natural flavor of the lamb. 
8 lamb ribs
3 small  green,yellow,or red sweet peppers chopped
2 cloves of garlic
1 tbs oregano
1 tbs cooking oil
1/4 cup chopped olives


Preheat broiler.
 Place chops on the unheated rack of a broiler pan. 
Broil for 10-15 min. @160 degrees.

In a large skillet cook peppers, garlic, and oregano in hot oil for 8-10 min or until the peppers are crisp.
Add olives
Cook and stir until the olives are heated through. 

I served it over rice seasoned with just a little salt. Enjoy!

Boston Creme Pie

I usually don't make many sweets during the week, but this one was way to good to pass up! One of my favorite places to get recipes is Cooks.com. (That is where we found this yummy treat.)  I have to admit that this was probably the hardest desert recipe I have done.  So, if you are up for a little challenge, here it is! 

CAKE:

1/3 c. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
1 1/4 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. milk


Cream shortening, sugar, eggs and vanilla until light and fluffy. Combine dry ingredients, then add alternately with milk to creamed mixture, beginning and ending with flour mixture.
Pour batter into a well greased and floured 9 inch layer pan. Bake in a 350 degree oven 30-35 minutes or until cake tester comes out clean. Cool 10 minutes then remove from pan and cool completely.
FILLING:
1/3 c. sugar
2 tbsp. cornstarch
1 1/2 c. milk
2 egg yolks, slightly beaten
1 tbsp. butter
1 tsp. vanilla

Combine sugar, cornstarch, milk and egg yolks in a saucepan. Cook and stir over medium heat until mixture boils, boil and stir 1 minute. Remove from heat; blend in butter and vanilla. Cover and chill. Cut cake into 2 equal layers, spread filling onto bottom layer; and cover with remaining layer.


GLAZE:
3 tbsp. water
2 tbsp. butter
3 tbsp. unsweetened cocoa
1 c. confectioners' sugar
1/2 tsp. vanilla

In a small saucepan, combine water and butter; bring to a boil. Remove from heat and immediately stir in cocoa. Beat in confectioners' sugar and vanilla until smooth, cool slightly. Pour onto top of cake, allowing some glaze to drizzle down the sides. Chill before serving.

Cinnamon Rolls

   Sorry it has been a while since I have posted anything.  With three little munchkins to take care of it's hard sometimes to find the time. But anyway here we go!

 Cinnamon rolls in my house usually don't last very long. So, I hope you have the same results that I have when you present these yummy bits to your table. 

My husband really likes them!


When I make the dough, I use my refrigerator roll recipe.  I make up the bread the night before and put it in the fridge over night (it makes it easier to work the dough).  The dough will also keep for 5 days in a sealed container, so if you want to use just a little at a time you can.

When you decide to make the cinnamon rolls, here is the recipes for the filling and the frosting:

Filling:
1 cup brown sugar
1 Tbsp cinnamon
Pinch of salt
1 1/2 Tbsp melted butter 

Icing
1/4 cup cream cheese, softened
3 Tbsp milk
1 1/2 cups powdered sugar


For the filling, combine all the dry ingredients, then add the melted butter.

Roll out the dough and smear the filling on. 
Roll up the dough and cut into 1-2 inch slices.  
Bake @ 350 for about 20-25 min.
Combine all the icing ingredients. Whisk until smooth.
After they cool a little, pour on the icing.

Another attempt at the caramel.

The caramel that I made last night tasted great but didn't look very appetizing. So I made another one today and did it on the stove in a pot.

It is really good with apples!
The time was a whole lot shorter,only took 2 1/2 hours, instead of the 8 hours that the cock pot took.


All you do is fill your pot up with water.

Put your can of sweetened condensed milk in the pot (be sure you peel the label off and get the glue cleaned off also.)

Boil it for 2 1/2 hours. Be sure to check on it to make sure that your can is completely covered in water.

Let the can completely cool before try to open it. It will burn you, I learned the hard way last night. OUCH. :)

Caramel (continued)

My last post was about how to make caramel in the crock pot. It turned out great!

I forgot to add that you NEED to let you little can cool before you attempt to open it. Otherwise you will have burnt fingertips, like me! :)

So off I go to enjoy my night time snack of caramel and apple slices.  Enjoy.

My little can of yummy goodness!

So here is what you do:

1) Clean the can, get the label off and the glue.
2) Line the bottom of your crock pot with aluminum foil.(Rust rings in the bottom of my crock pot just don't    sound very good to me!)
3)Completely cover the can with water, turn it on low.
4) Now let it cook for 8 hours.

Mine should be ready about 10 tonight so I will post pictures whenever it is done.

Pasta Bake

This is one of my Husbands favorite dishes, and this comes from a man who doesn't really care for pasta!  It's also a great way to use up leftover pasta.  

1 pound hamburger meat 
1 jar pasta sauce
1 pack pasta noodles  (any kind works great)
shredded cheese (enough to cover the top)
1 can mushrooms (optional)





  All you do is brown the hamburger meat, drain. Cook the noodles, drain them also. Then you mix the hamburger meat, noodles, pasta sauce, and mushrooms all together.  Put it in a 9x12 baking pan, sprinkle the cheese on top and bake at 350 until the cheese is nice and bubbly.

If you are using leftover pasta just add more pasta sauce and the cheese and bake as directed and enjoy.

Hungarian Potato Soup

I love this recipe. I didn't bring the cook book that has the recipe in it to Greenland. I had a blonde moment! Thankfully, www.cook.com  came to my rescue! This is a neat website with some great recipes on it.



1/2 c. chopped onion
2 tbsp. butter
2 tbsp. olive oil
4 med. potatoes, peeled & diced
1 1/2 tsp. salt
1/4 c. flour
1 1/2 tbsp. paprika
1 c. sour cream
2 1/2 c. milk

Saute onion in butter and olive oil until tender. Add the potatoes, salt and 2 cups water. Cover and cook 15 minutes or until tender. Blend flour, paprika and sour cream until smooth and stir into the potato mixture. Add milk and heat to boiling, stirring constantly. Cook for about 1 minute. Season to taste.
I did change some things in the recipe when I made it. I put about half of the paprika that it called for. And I only used 3 Tbsp of butter and no olive oil, to me that was going to be way to greasy with all that oil.  It turned out great with the changes I did. So just experiment and see which one works for you!
