Fruit Filled Oatmeal Bars

This desert is one of my family’s favorites! And it’s super easy to make.

1 cup all purpose flour
1 cup quick-cooking rolled oats
2/3 cup packed brown sugar
1/4 tsp baking soda
1/2 cup butter
Your choice of fruit filling. (I use about half a jar of marmalade)
             
1)    In a medium bowl combine flour, oats, brown sugar, and baking soda. Using a pastry blender (I use a fork, works great!) cut in butter till the mixture resembles coarse crumbs. Set aside ½ cup of the mix.

2)    Press remaining crumb mix into bottom of an ungreased baking pan.

Pack it down!

3) Spread with desired filling.

Strawberry Rhubarb marmelade - my fave!

4) Sprinkle with reserved crumb mixture.

Drop the rest on it!


5) Bake at 350 for 30-35 min. or until the top is golden brown. 


Yummy goodness!!

Cool on wire rack, then cut into bars….Now enjoy!
