Chocolate Brownie Cookies

Chocolate….need I say anymore?

1 1/2 cups chocolate chips
½ tsp baking soda
½ cup (1 stick) softened butter
¼ cup brown sugar
2 eggs
1 ¾ cups all purpose flour
¼ tsp salt
½ cup granulated sugar
1 tsp vanilla extract
¾ cup mixed nuts (optional)


1)   Melt chocolate on low heat and stir constantly, until smooth. Set aside and cool to room temp.

2)   In a small bowl mix flour, baking soda and salt.

3)   In a larger bowl mix butter, granulated sugar, brown sugar, and vanilla.

4)   Add the eggs to the butter mixture, one at a time, mixing well after each egg is added. Then mix in the melted chocolate and mix until well blended.

5)   Gradually beat in the flour to the chocolate mixture, until smooth.

6)   Drop dough by rounded tbs. onto ungreased baking sheet, bake at 350° for 8-12 min. The middle will still be soft, after you pull them out let them stand for 2 min. Then put them on a cooling rack until completely cool.

Refrigerator Rolls

 This recipe takes some time, but it is well worth it!


1 cup milk
¼ cup butter
¼ cup sugar
1 tsp salt
¼ cup cool water
1 egg
1 pkg dry yeast
3 ½ cups flour (You can use part wheat flour, but no more than half)


1)      Heat milk in microwave for 3 ½ min, don’t let boil over. If scum forms on top remove with a fork.

2)      In a large bowl add butter, sugar, and salt to the milk.

3)      When butter melts add water.

4)      Add egg into milk mixture. (The mixture should should be luke warm by now)

5)      Add pkg of yeast, stir to dissolve.

6)      Stir in the flour, you can’t mix too much. This will be a wet and sticky dough.

7)      Cover dough and let rise until it doubles in size, about 1 hour (The microwave is a good place to let it rise, as long as it’s not in use! J)

8)      When the dough is risen, stir down.

9)      Replace cover and put in fridge until ready to make into rolls. You can store them in the fridge for up to 10 days and use it as you need it.

10)  Turn out dough on floured surface (about 1 cup of flour)

11)  Knead dough until smooth and elastic, about 15 to 20 times.

12)  Form into balls cover, I use a muffin tin to bake them in, it works great, and let rise until doubled in size and smooth.

13)  Bake @ 350 for 30 min. Until golden brown.


You can also use the dough to make some really good
cinnamon rolls, and stromboli!

Fruit Filled Oatmeal Bars

This desert is one of my family’s favorites! And it’s super easy to make.

1 cup all purpose flour
1 cup quick-cooking rolled oats
2/3 cup packed brown sugar
1/4 tsp baking soda
1/2 cup butter
Your choice of fruit filling. (I use about half a jar of marmalade)
             
1)    In a medium bowl combine flour, oats, brown sugar, and baking soda. Using a pastry blender (I use a fork, works great!) cut in butter till the mixture resembles coarse crumbs. Set aside ½ cup of the mix.

2)    Press remaining crumb mix into bottom of an ungreased baking pan.

Pack it down!

3) Spread with desired filling.

Strawberry Rhubarb marmelade - my fave!

4) Sprinkle with reserved crumb mixture.

Drop the rest on it!


5) Bake at 350 for 30-35 min. or until the top is golden brown. 


Yummy goodness!!

Cool on wire rack, then cut into bars….Now enjoy!
